Desserts

BROWNIES & Bar Cookies

Easy Brownies

makes a 8x8 or 9x9 pan unless doubled. Doubled makes thicker brownies in 13x9.

1 Cup Sugar
1/2 Cup oleo/butter or shortening for cakey brownies
OR vegetable oil for gooey brownies
OR applesauce for healthier version
2 eggs
1 teaspoon vanilla
1/2 teaspoon salt
5 Tablespoons cocoa (about 1/3 cup)
3/4 Cup flour (can replace 1/4 with whole wheat)
optional nuts or chocolate or peanutbutter chips

Just mix. Put in pan & bake at 350 for 20-30 minutes... How gooey vs. cakey do you like 'em?

Blonde Brownies
1/2 Cup butter (melted)
2 Cups brown sugar
2 eggs
1 teaspoon vanilla
2 teaspoon baking powder
2 Cups flour
Walnuts optional

Combine in order given. Bake in 13x9 greased pan at 350 for 20-25 minutes.


COOKIES
Orange Chocolate Crisps

1 & 1/3 Cup Sugar
1 Cup Shortening or butter
2/3 Cup brown sugar
2 eggs
2 Tablespoons milk
4 Cups of rice crispies crushed to 2 cups (I use a mixture of cocoa & plain cereal)
1 Tablespoon grated orange peel (I let dried version sit in milk for awhile)
1 teaspoon orange extract
1 teaspoon vanilla
2 Cups flour ( can substitute at least 1/2 cup whole wheat)
1 teaspoon baking soda
1 teaspoon baking powder
1 cup chocolate chips optional

Beat sugars & shortening/butter until creamy. Add eggs, milk, orange peel, extract & vanilla. Beat well. Add powder, soda & flour. Add Cereal last.

Original recipe used only plain cereal and the chocolate chips, but I prefer to use some chocolate rice crispies & then usually omit the chips. The original also only uses vanilla & I replaced 1/2 of it with the orange extract.

Bake a 350 for 8-9 minutes.
